Herbed Chicken Casserole

Herbed Chicken Casserole

A great easy comfort meal. You can use leftover rotisserie chicken, chicken breasts, or even canned chicken.

Total Time: 50 min

Serves 8

Ingredients

1 carton Pacific Organic condensed cream of chicken soup
8 oz sour cream
1/2 tsp granulated garlic
3 tsp dried sage, divided
3-4 cups (15-20 oz) cooked chicken, shredded/cut into bite-size pieces
1 c Jiffy all-purpose baking mix
1 tsp dried thyme
1/2 c (2 oz) shredded sharp Cheddar cheese
3/4 c milk



Instructions

Preheat oven to 350°F. Spray a 2 qt casserole dish with cooking spray. In a large bowl, stir together cream of chicken soup, sour cream, garlic, and 2 tsp of sage until smooth. Fold in chicken. Spread evenly in the bottom of the casserole dish.

In a bowl, stir together baking mix, thyme, cheese, and remaining tsp of sage. Add milk. Mixture will be runny. Pour over chicken mixture, jiggling it a little to spread it evenly.

Bake uncovered for 40-45 minutes, or until top begins to brown. Let stand 10 minutes before serving.
